NOVEMBER: CHESTNUTS

SEASONAL AND SUSTAINABLE PRODUCE CHAMPIONED EACH MONTH BY CHEF CRAIG HENNESSEY AT THE ROBIN HOOD INN

 

CHAMPION OF THE MONTH After mushrooms, sweet chestnuts are my favourite ingredient to forage in the Autumn.

I'm lucky because I know of a few beautiful trees which produce the wonderful fruit every year.

Walking through the woodlands at this time of year is a joy for the senses. The colours of the leaves as the light fades and the feel of the cold air around. The final push of nature before the cold dormant winter.


Not to be confused with the inedible horse chestnut (conker) tree. The sweet chestnut is native to southern Europe. Thought to be introduced by the romans, it can be found commonly throughout the UK, in parks and estates.

 

Spending time in the outdoors has been proven to improve mental health and well being. Studies have shown that spending an average of 2 hours a week in nature, can reduce anxiety, depression, the feeling of hopelessness & loneliness.


There are many wonderful health benefits attributed to forest therapy including boosted immune function, improved cardiovascular and respiratory health, attention restoration and a reduction in stress and depression.

Chestnuts are higher in carbohydrates and lower in fat and protein than other nuts. They contain fibre, potassium, iron, zinc and manganese.


Chestnuts and their nutrients may help improve heart health, blood sugar control, weight loss, inflammation, and digestive health.


Most notably, however, they are exceptionally rich in vitamin C – with a 30g serving providing 20% of our recommended daily intake. The high concentration of vitamin C and other antioxidants make them a friend to our immune system at the time of year when we need it the most!

 


YES CHEF...


The nuts can be baked, roasted, boiled or microwaved to remove their shells. Then blanch into boiling water to rub off the inner skin.


PREPARING Be sure to score the skins so they don’t explode when they are cooked.


COOKING

Once cooked and peeled they can be eaten as they are or used in desserts, cakes, breads and stuffings. You can also candy them, puree them or store them in syrup.


Try them pan fried as a seasonal side dish with some wilted kale and confit shallots.


Roast them with some bacon lardons and serve with fresh grilled monkfish tails.


Caramelise chestnuts with diced butternut squash and truffle, to top a seasonal risotto.


blend with cooked black pudding and add a rich redcurrant cumberland sauce for a delicious starter or canape.
