We picked up this recipe on our honeymoon to the wonderful island of Tobago, staying at the beautiful Castara Retreats, Tobago, Visit Tobago.
This is a Refreshing, healthy midweek dining experience, something a little different to try if you have already used your repertoire of kitchen recipe.
Jerk roasted gammon, with rice & beans, with pineapple salsa.
We would highly recommend the pineapple salsa as a snack, very healthy and very delicious. we use 1 chilli in the recipe, but you are welcome to put as many as you like 😋🌶🔥
Our first experience of this West Indian 'snack' was on a boat trip to Englishman's bay, on the Caribbean coast of Tobago. Our skipper Amar had rustled this up for us tourists to try, i tucked in and it was delicious. fresh, spicy, sour and sweet, all in one. however all four other trippers declined
This recipe will feed 4 people a healthy nutritious meal, that contains all your recommended 5 fruit and veg/ day. There is so much colour in the caribbean kitchen. this colour comes in the ingredients and the personalities who cook with them.

Its always good to have some real West Indian Hot sauce on hand, helps you work up a sweat. i would recommend any Scorpion pepper based sauce to blow your mind.
There are some great Reggae artists over the years, so you would be spoilt for choice as to a soundtrack for this recipe. we always enjoy a little Calypso Rose.
